Hi Veronica - My answer might seem like a bit of a dodge but it really is true that it's personal preference. The various surfaces will each give a slightly different look and feel to the image and since I don't know you or your preferences, I am at a loss as to how to guide you. If it were me and I knew it was going to be behind glass, I'd go with something less than full gloss, say a luster, so as not to have two reflections. But then others just have to have that extra crispness and contrast that gloss yields. There is a lot online about it and here is just one link of many.
